Monoethyl fumarate (CAS 2459-05-4) is white crystalline powder, soluble in water and ethanol. It is an excellent anti-mildew agent, referred to as MEF. It can inhibit the growth of mold, extend the shelf life of food and feed, have small toxicity and small stimulation of the skin and mucous membrane, is expected to become a new fungicide of food & feed industry.
